Maybe the best knives I’ve ever used or owned… UPDATE: 7 months later and I still haven’t found one thing even close to undesirable about these knives. They hold an edge so well. The other thing that’s been a pleasant surprise is how incredibly well the sharpening steel works. Just ordered a second one for our other place. Certainly not inexpensive, but the best cutlery value I’ve experienced. A Sharp set, in more ways than one I’m having so much fun with these! Now I worked in a high-end kitchen supply store for a while, we sold Wusthof, Zwilling J.A. Henckels, and Shun knives. Wusthof was my go-to, the Henkels lost my interest with their International collection, and the Shun were intimidatingly expensive; granted, they were all a bit above my means.
