Their blades have engineered flex points that spring back to its shape. Great knife I’ve had this knife almost 5 years now and it’s still top notch like all the Dexter products that I own. Sharpens easy, and lasts a long time between sharpenings….with the help of some steel honing of course. I have many fillet knives that I use, but this is my go to for big snapper and big redfish, but I’ve also cleaned big amberjack, ling, tuna, thick skinned trigger fish and many others with it. Best fillet knife ever! This is the best fillet knife I’ve ever owned! I used to work on a trawler in the Bering Sea. This knife is as good as or better than the ones issued to us while on board! Good grip and keeps an edge. Excellent for working with larger species like Steelhead or Salmon! My one complaint is I wish it came in a sheath. But still gets 5 stars!
