Made with Japanese 420J2 stainless steel with a beautiful finish and a razor-sharp 16 Degree cutting angle each side, the Kai Personal Steak Knife glides through steaks like butter, without crushing or tearing the meat, causing flavorful juices to be lost. The handle is durable POM (a precision engineering thermoplastic) with a decorative inlaid crest. For easy storage, the knife folds to fit inside its own leather sheath.

Stainless alternative to expensive high carbon My friend has the Shun, was showing it off. Had to get this to show him up on the price tag. The handle material is different, but the real difference between the two is that the Kia is 420 stainless steel, Shun is high carbon steel. High carbon steel will hold its edge better. Stainless is a little softer and thus will dull faster. However, it’s also extremely easy to sharpen. So, save $70 and remember to hone your Kia knife every few uses.

KAI versus Shun I own one of the Shun Folding Steak Knives. I saw these at the Atlanta Blade Show in June and decided I would give it a try. The biggest difference in the 2 is the Shun has a better handle material. For $90 difference in the price I’ll go with the KAI. I actually like the shape of the blade in the KAI better.

Fantastic Personal Steak Knife I have both the Shun 5900 and the KAI 5700 and I have to say that for US$30.00 this is a great little knife to put in your pocket to take to that barbecue or stash in your gear for that campfire cooking session. It’s sharp, not “razor sharp” or chef’s knife sharp, but sharp enough to make quick work of whatever piece of meat is in front of you. The polymer handle gives this a ruggedness that gives you the confidence to take this one places you might not want to take the Pakka wood…
