Simplest Way to Get a Super Sharp Edge I’m a professional chef/cookbook author and TV cooking show host who appreciates the value of a well-built knife sharpener. I’ve used just about every type of sharpener on the market. My favorites, by far, are made by Work Sharp. I’ve had other chefs claim that you should never use a belt-type sharpener on your knives. That’s about as true as saying that “searing meat seals in the juices”…another popular misconception. My favorite Work Sharp sharpener is the Ken Onion model. I use it…

It takes a tremendous amount of work to bring the blade to a truly sharp edge. IMO it will destroy your high-quality knives (cheap ones too). I returned it and replaced it with a similarly priced ceramic rod sharpener. With minimal effort, I use it while watching TV, it creates a far better edge with very little material removal.

Will not work on very dull knife or a never sharpened knife Combo knife sharpener works for what it was intended to do. Will not work on very dull knife or a never sharpened knife. Only 220 grit sanding belt 1/2 x 10 inch and no other grit belts made to fit this unit.
